Avocado Ice Cream

  • Yield 2-3 servings


1 medium avocado, peeled & pitted
1/2 cup milk
1/4 cup sugar (1/4 or less)
1/2 teaspoon vanilla extract
1-2 cup low fat Cool Whip


Mash avocado with an electric mixer, or use a food processor. Blend in the milk, sugar and vanilla until smooth.  Mix in 1 to 2 cups of low fat Cool Whip, freeze.
