Avocado Lemon Salsa

  • Yield: 4 to 6 servings


1/2cup chopped tomato
1/2cup chopped onion
1/2cup chopped black olives
1/4cup whole corn drained
1/4cup chopped cucumber
1/4cup olive oil
1/4cup lemon juice
1/2cup chopped avocado blended in b-4 seving


Chop and mix everything in medium bowl EXCEPT avacado. Chill at least 2-3 hours. Add in avacado just before serving to prevent browning of avacado. Can also add salt pepper and a little basic or oregano if desired. Serve with chips or add on top of salads.
