Aunt Mary’s Onion Shortcake

This is a great side to serve with fish or seafood.


2 cups buttermilk baking mix
2/3 cup milk
3 large onions, sliced
2 tablespoons butter
2 eggs
1 small can evaporated milk
1/2 teaspoon salt
1/4 teaspoon pepper


  1. Preheat oven to 350F.
  2. Combine baking mix and milk until soft dough forms.  Set aside.
  3. Steam onions in butter until iridescent.
  4. In a small bowl, beat eggs, evaporated milk, salt and pepper.
  5. Press dough into greased 11×7-inch casserole; top with onions.  Pour egg mixture over all.
  6. Bake at 350F for 30 minutes or until brown.
