Apricot Chicken Salad

1whole cooked rotisserie chicken (remove meat off the bones, dice into small 1/2 inch cubes)
1cup pistachios, toasted & chopped (reserve extra 1/4 cup to toss over the top)
1 celery rib cut into small 1/4 inch dice (1 cup)
1small chopped red bell pepper ( 1/4 inch dice)
2tablespoons finely chopped shallot
1cup of chopped dried apricots
1/2cup mayonnaise
1tablespoon apple cider vinegar
1tablespoon of fresh thyme
1/2teaspoon salt
1/2teaspoon ground white pepper
1 bag of washed & prepared mixed greens


Toss all ingredients in a large bowl until well combined. Serve over mixed greens. Sprinkle reserved chopped pistachios on top.
