Apricot Chicken Salad

  • Yield servings


1 whole cooked rotisserie chicken (remove meat off the bones, dice into small 1/2 inch cubes)
1 cup pistachios, toasted & chopped (reserve extra 1/4 cup to toss over the top)
1 celery rib cut into small 1/4 inch dice (1 cup)
1 small chopped red bell pepper ( 1/4 inch dice)
2 tablespoons finely chopped shallot
1 cup of chopped dried apricots
1/2 cup mayonnaise
1 tablespoon apple cider vinegar
1 tablespoon of fresh thyme
1/2 teaspoon salt
1/2 teaspoon ground white pepper
1 bag of washed & prepared mixed greens


Toss all ingredients in a large bowl until well combined. Serve over mixed greens. Sprinkle reserved chopped pistachios on top.
