Apricot Chicken Salad

Ingredients
- 1 whole cooked rotisserie chicken (remove meat off the bones, dice into small 1/2 inch cubes)
- 1 cup pistachios, toasted & chopped (reserve extra 1/4 cup to toss over the top)
- 1 celery rib cut into small 1/4 inch dice (1 cup)
- 1 small chopped red bell pepper ( 1/4 inch dice)
- 2 tablespoons finely chopped shallot
- 1 cup of chopped dried apricots
- 1/2 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon of fresh thyme
- 1/2 teaspoon salt
- 1/2 teaspoon ground white pepper
- 1 bag of washed & prepared mixed greens
Instructions
Toss all ingredients in a large bowl until well combined. Serve over mixed greens. Sprinkle reserved chopped pistachios on top.
