Moroccan Chicken Salad

Ingredients

4cups shredded cooked chicken (about 2 lb boneless, skinless chicken breasts, cooked)
1cup coarsely chopped dried apricots (about 7 oz)
1cup sliced almonds (about 5 oz)
1/2cup mayonnaise
2tablespoons lemon juice
1/2teaspoon ground coriander
1/4teaspoon ground cinnamon
1/4teaspoon ground cloves
1/8teaspoon ground nutmeg
1/8teaspoon cayenne pepper
1/2teaspoon salt
1/2teaspoon freshly ground black pepper

Instructions

Place chicken in a large bowl. Stir in all remaining ingredients until mixed well. Refrigerate at least 1 hour before serving.
