Apple Walnut Cake

- 2-- eggs
- 1/2cup oil
- 1 1/2cups sugar
- 1teaspoon vanilla
- 2cups flour
- 2teaspoons baking soda
- 1teaspoon each cinnamon and nutmeg
- 4cups chopped apples
- 2cups chopped California walnuts
Preheat oven to 350F.
Beat together eggs, oil and vanilla in large mixing bowl.
Add flour, baking soda and spices. Stir in apples and walnuts.
Pour into greased 10-inch bundt pan. Bake in 350F oven for 1 hour to 1 hour and 15 minutes, or until toothpick inserted in center of cake comes out clean.
Cool at least ½ hour before removing from pan.
