Apple Walnut Cake

Ingredients
- 2 -- eggs
- 1/2 cup oil
- 1 1/2 cups sugar
- 1 teaspoon vanilla
- 2 cups flour
- 2 teaspoons baking soda
- 1 teaspoon each cinnamon and nutmeg
- 4 cups chopped apples
- 2 cups chopped California walnuts
Instructions

Preheat oven to 350F.

Beat together eggs, oil and vanilla in large mixing bowl.

Add flour, baking soda and spices. Stir in apples and walnuts.

Pour into greased 10-inch bundt pan. Bake in 350F oven for 1 hour to 1 hour and 15 minutes, or until toothpick inserted in center of cake comes out clean.

Cool at least ½ hour before removing from pan.
