Apple-Jicama Salad with Pepitas

  • Yield: 4 to 6 servings


1/4cup apple juice
1tablespoon apple cider vinegar
1teaspoon light agave nectar (or about 1/2 tsp. honey)
2tablespoons olive oil
1teaspoon salt
3 apples, cored, unpeeled and small diced
1small jicama, peeled and small diced
1medium cucumber, unpeeled, seeded and small diced
1/4cup red onion, finely minced
1/4cup toated pepitas (pumpkin seeds)
1tablespoon fresh chives, finely minced


  1. In a small bowl, whisk together apple juice, vinegar and agave nectar with salt.Drizzle in the olive oil and continue to whisk until incorporated. Set aside.
  2. In a large bowl combine apples, jicama, cucumber, onion, pepitas and chives. Stir in the vinaigrette and combine well to coat. Refrigerate for 20 minutes beforeserving. Garnish with more pepitas and chives.
