Apple Fish Cakes

Ingredients
- 1 cup codfish (shredded)
- 2 cups potatoes (mashed)
- 1 cup apples (grated)
- 1 whole egg
- 1/8 teaspoon pepper
- 1 cup vegetable oil

Instructions
- Freshen codfish by submerging in cold water for about 2 minutes.
- Drain and press dry.
- Combine codfish, mashed potatoes, apple, egg and pepper.
- Form into cakes (or small balls).
- Dust with flour.
- Fry in vegetable oil (about 2 inches) at 375 degrees until golden brown.
- Drain on paper towels.
