Apple Fish Cakes

  • Yield: 12 servings

Ingredients

1cup codfish (shredded)
2cups potatoes (mashed)
1cup apples (grated)
1whole egg
1/8teaspoon pepper
1cup vegetable oil

Instructions

  1. Freshen codfish by submerging in cold water for about 2 minutes.
  2. Drain and press dry.
  3. Combine codfish, mashed potatoes, apple, egg and pepper.
  4. Form into cakes (or small balls).
  5. Dust with flour.
  6. Fry in vegetable oil (about 2 inches) at 375 degrees until golden brown.
  7. Drain on paper towels.
