Apple Coffee Cake

  • Yield: 12 servings


1/2cup butter, softened
2cups sugar
4 eggs
2cups flour
2teaspoons baking powder
1/2teaspoon salt
5cups chopped peeled apples
1teaspoon vanilla extract
1 1/2tablespoons sugar
1/2teaspoon cinnamon


  1. Cream butter at medium speed in mixer bowl until light.  Add 2 cups sugar gradually, beating constantly until fluffy.  Beat in eggs 1 at a time.
  2. Combine flour, baking powder and salt. Add to creamed mixture; mix well.  Stir in apples and vanilla.
  3. Spoon into greased and floured 9×13-inch baking pan.  Sprinkle with mixture of 1 1/2 tablespoons sugar and cinnamon.
  4. Bake at 350F for 45 minutes.  Serve warm.
