Chicken Salad with Fruit & Nuts

  • Yield servings


1 cup mayonaise
1/4 cup + 2 tablespoon apple cider vinegar
1/2 teaspoon cinnamon
2 tablespoons sugar
1 tablespoon olive oil
whole Rotisserie Style Chicken, shredded
3/4 cup crushed pineapple (with juice)
1 cup toasted pecans, coarsely chopped
3/4 cup dried cranberries
1/2 cup diced red bell pepper


Whisk together the first 5 ingredients. Toss with the remaining ingredients. Serve on a bed of spinach
