Chicken: Pat dry Rub with rub, roll in olive oil, re rub in rub. Wrap in plastic, chill 1 hour. Make Sauce: In a sauce pan:Finely grind cloves, add veal stock, water, onion, sugar, chili powder, coffee granules, Worchester sauce, caynne pepper and salt. Cook at med high heat for about 30 mins. reducing to 1 cup. Strain mix with fine sieve, pressing all stock. Return to sauce pan, bring to a simmer, add butter. Take off heat. To Cook: Preheat oven to 400F. In a shallow pan, put in oven for about 10-12mins ( 160F internal temp ) Take out, allow to rest 5 mins. To Plate: Sauce on bottm, chicken on top.
