Pear Balsamic Chicken

Amchur Pear Chicken Breasts:
1 1/2 quarts water
1 cup organic pear juice (R.W. Knudsen Family Juices)
5 tablespoons kosher salt
2 tablespoons white sugar
4 -- skinless boneless chicken breasts
1/2 cup olive oil
4 cloves garlic, minced
1 tablespoon fresh rosemary, minced
2 teaspoons amchur powder
Apple Pear Balsamic Sauce:
1/2 cup pear wine ( I prefer pheasant valley winery)
1/2 cup Pear balsamic vinegar (I prefer archangel's)
1/2 cup Sparkling Crisp Apple Cider ( I prefer R.W. Knudsen family juices)
1 tablespoon butter
1 tablespoon olive oil
2 -- Vidalia onions, each cut into 8 wedges
3 -- pears, cored and each cut into wedges
1 teaspoon salt
Other ingredients:
1 tablespoon olive oil
1 -- pear cored and sliced
-- Garnish with fresh pear slices


In a large bowl, stir together the water, pear juice, kosher salt, and sugar. Add chicken breasts to this brine, and let them soak for no more than thirty minutes. Drain and discard the brine. Pat chicken breasts dry with paper towels.
In a shallow dish, stir together the olive oil, garlic, rosemary, and amchur powder. Place chicken breasts in the dish, and turn to coat. Cover, and marinate in the refrigerator until the apple pear balsamic sauce is ready.
Pour the pear wine, pear balsamic vinegar, sparkling crisp apple cider into a medium saucepan. Bring to a boil, and cook until reduced by 1/2, about 10 – 15 minutes.
Melt butter with olive oil in a large skillet over medium-high or high heat. Add the onions and pears, and quickly brown being careful to keep the wedges intact. Once the onions and pears are browned, reduce heat to low, and cook for about 7 minutes, or until tender. Stir in the reduced apple-pear balsamic sauce and salt. Keep sauce warm until chicken is done. In another large skillet heat oil on medium high heat. While oil is heating, Take chicken breasts from marinade. Pat dry. Add chicken breasts and the sliced pear to the oil and cook until chicken is no longer pink inside about 6 minutes per side. ( Take pear slices out from skillet when warm) Place the chicken and pear slices onto individual serving plates. Evenly Pour the apple-pear balsamic sauce over the chicken breasts. Garnish with fresh pear slices. Serves: 4, prep time: 15 minutes, cooking time: 34 minutes
