Almond Joy Pie (my original receipe)
- Yield 8 servings
- 2 units 9" pie crusts (frozen Mrs. Smith are really good)
- 1 stick melted butter
- 2 cups sugar
- 5 units eggs
- 1 teaspoon vanilla
- 3/4 cup buttermilk
- 1 cup coconut, shredded
- 1/2 cup chocolate chips
- 1 package sliced almonds
PREHEAT oven to 350. Mix butter, sugar, eggs, vanilla, buttermilk, and coconut together.
Stir all ingredients together
Pour l/2 cup chocolate chips in pie crust bottom
Pour mixture on pie crust over chocolate chips
Sprinkle with sliced almonds and bake in preheated oven for 60 minutes or until top of pie is medium brown.
Cool. Refrigerate, or leave on counter for up to 3 weeks.
I make 4 pies at a time because my oven will hold them. Everybody loves this pie!!!!
