African Barbecued Pork

Apricot and curry create a sweet pork recipe, perfect to serve with rice



1/2 cup dried apricots
2 cups boiling water
1 cup onions thinly sliced
2 tablespoons vegetable oil
1/2 teaspoon curry powder
1 teaspoon brown cooking sauce (like
2 teaspoons salt
1 tablespoon brown sugar
1/2 clove garlic, minced
1/4 cup vinegar
2 pounds lean pork, boneless


  1. In a medium-size saucepan, cover apricots with boiling water, allow to soak for 30 minutes, and then cook until tender.  Meanwhile, saute onions in oil for 10 minutes, until they are golden.  Mash apricots with a potato masher.  Combine them with onions, curry powder, brown sauce, salt, brown sugar, garlic and vinegar in saucepan. Bring all ingredients to a boil, and then remove from heat.  Preheat oven to 350 degrees.  Cut pork in 1-inch cubes.  Place evenly in a 13-by-9 inch baking dish.  Pour sauce over pork.  Cook, uncovered, for 1 hour and 15 minutes.  Base meat several times with sauce.

Tips from Our Test Kitchen: This tender and well-seasoned pork is great with rice.  Try with a dollop of plain yogurt, fresh mint and golden raisins.  It’s also great served with chutney.
