ABC Muffins

  • Yield: 1 1/2 dozen


2cups shredded apples
1 1/3cups sugar
1cup frozen blueberries
1cup shredded carrots
1cup chopped pecans
2 1/2cups flour
1tablespoon baking powder
2teaspoons baking soda
2teaspoons cinnamon
1/2teaspoon salt
1/2cup vegetable oil
2-- eggs, lightly beaten


  1. Combine the apples and sugar in a large bowl and mix well.  Fold in the blueberries, carrots and pecans.  Mix the flour, baking powder, baking soda, cinnamon and salt in a bowl.  Add the flour mixture to the apple mixture and stir just until moistened.  Whisk the oil and eggs in a bowl until blended.  Add the egg mixture to the apple mixture and stir just until combined.  Fill greased or paper-lined muffin cups 2/3 full.  Bake at 375F for 20 to 25 minutes or until the muffins test done.  Cool in the pans for 5 minutes.  Remove to a wire rack.  Freeze for future use, if desired.
