Winter Fruit Salads
A paucity of summer veggies doesn't have to mean forgoing crisp fresh salads in cold-weather months.
It’s winter, and lets face it, fresh tomatoes are not at their best. So for winter salads, think fruit. Cranberry relish is nice, but why not brighten up the holiday table with these fresh, vibrant fruit salads. Sweet, juicy grapes, tart grapefruit, and crunchy apples and pears tossed with mesclun or baby arugula is enough to make our taste buds start to tingle.
Simple vinaigrettes let the fruits and greens shine. Toss in some pungent feta or blue cheese, almonds, pecans and dried fruits and you have salads fit for the holidays, or anytime for that matter.
