Make something special for the vegetarians at your table this Thanksgiving.
Being vegetarian on a holiday that centers a roasted turkey isn’t always the easiest. This Thanksgiving, encourage family and friends to think outside the birdie box by trying one of these meatless main dishes designed to leave vegetarians as blissfully stuffed as the carnivores:
- Stuffed Vegetables: Bell peppers, squash and eggplant make perfect edible "bowls" for quinoa and couscous based fillings. Lay off the cheese and vegans will also delight in servings such as our Roasted Winter Squash with Cornbread Stuffing.
- Vegetarian Lasagna: Meatless lasagna can be just as rich when filled with heartier veggies like eggplant, zucchini, mushrooms and onions. We love our Winter Vegetable Lasagna bursting with spinach greens, butternut squash and ricotta.
- Roasted Tofu: Don’t believe the haters—tofu can be absolutely amazing when done up right. Versatile and hearty enough to appropriately pair with other Thanksgiving fixings, our Orange Glazed Tofu recipe will become the envy of you meat-eating family.
Courtesy Tip: If you aren’t the feast’s host, be accommodating and always offer to bring a vegetarian dish of your own. Between pumpkin pie and turkey carving, the chief chef will have enough on his or her plate!

Butternut squash and turnip greens—unlikely for lasagna, but so good.
A glaze with complex flavors elevates tofu.
