There are good leftovers and there are bad leftovers. Extra cake from the night before? That's a good leftover. Three-day-old shrimp scampi? Not so much.

By mid-week, most of us have managed to collect a small stockpile of tossaway bowls and plastic bags filled with the detritus of dinners past. We hate to throw perfectly good food away, but we're not quite sure how to make leftover rice from last night's Chinese takeout into tonight's delicious dinner.
