Your kids may know about Santa Claus, the Easter Bunny, and the Muffin Man…but do they know the legend of the Leprechaun? This sly little shoemaker spends St. Patrick’s Day darting about and playing tricks on his unassuming (and much larger) human counterparts. He’s almost impossible to catch, but we like seeing his marks left on our St. Patrick’s Day menu.
In the spirit of the leprechaun, gussy up breakfast, lunch and dinner in healthy green. Because who knows, an extra boost of Irish emerald may make your kids’ eyes keener on catching him.
Green Eggs and Ham: Instead of going the food dye route, give eggs a little green by scrambling them with a fresh and tasty pesto or spicy salsa verde. Serve alongside ham for a Dr. Seuss classic, or steak for something a little dressier. Click the image above for a fabulous basil pesto recipe.
Grilled Cheese with Apples: Tuck a few slices of green Granny Smith apples into grilled cheeses for lunchtime. Their tart flavor will balance sharp cheddar and Gruyere cheeses wonderfully.
