Strawberry shortcake has forever been my family’s go-to warm weather dessert. Year after year my mother would pick up tubs of cool whip from the grocer, containers of strawberries and packages of little yellow sponge cakes with dimples ready for filling. Stack the trio high and voila—strawberry shortcake.
I liked shortcake fine then, but didn’t truly appreciate the dessert until the day I deviated from my mom’s combo and made shortcake from scratch. Unlike the moist cakes from the store, homemade shortcake is firm and biscuit-like with a flavor and texture reminiscent of pie crust. Once I paired the freshly baked crumble-in-your-mouth shortcake with soft whipped cream and juicy macerated berries, it was love at first bite.
At Relish we have taken homemade strawberry shortcake to the next level by changing up the strawberries for other equally fantastic fruit. We even like tingeing some shortcakes with hints of pecan or coconut flavor.
