Pesto just may be the perfect condiment, and the flavor captures the sunny, herb-prolific months of the year better than any other we can think of.

By definition, it’s is an uncooked sauce made with basil, garlic, pine nuts, and Parmesan or Pecorino cheese…but we’ve never met a definition that couldn’t stand a little stretching.

Pesto, we decided, needed a new spin—so we put our cooking caps on and came up with a few flavorful new variations. Here’s round-up of some our favorites, along with a few fresh recipes you can doll up with your favorite kind.
