When it comes to cooking something special for a holiday meal or a family potluck, you have to pick your battles. Do you want a wow-factor dish that take hours of prep time or do you need something that you can whip up now and bake up later?

If you're multi-tasked out or just plain tired this Easter, why not lay down your sword and leave the rack of lamb for another day? Here are six make-ahead brunch and dinner dishes made with fresh, wholesome ingredients—all travel well and most can be assembled at least a day or two before you need them. To store, cover tightly with plastic wrap, and refrigerate uncooked until show time.
