Back to School Eats
Sometimes my stomach gets queasy just thinking of the aroma that permeated our school cafeteria. When my daughter “went into the system” three years ago, I’d hoped things had changed. Sadly, though, we have no Alice Waters or Ann Cooper at our school. The food victories have been few and slow-moving. We finally got a salad bar after two years of waiting for a Department of Education work order to be filled for a faulty electrical outlet.
Still, I try to stay positive. While I can’t control everything, I can find comfort in knowing I send my daughter off each day with a healthy, tasty lunch. Luckily she’s relatively easy to please, and loves chowing down on more than just sandwiches.
One of her favorites is also an easy weeknight dinner: spicy peanut noodles. Okay, so maybe the kick is more my speed, but that’s an easy enough fix by adding jalapenos on the side. If your kiddos like a little punch, then I highly suggest Peanut & Co.’s The Heat is On peanut butter. It’ll wow your tastebuds. Whether you like it mild or four-alarm, don’t forget to make extra to pack for the next day.
