Although they are the underdogs of the legume world, lentils provide more folic acid than any other unfortified food. Just a cup of them provides us with 90 percent of the recommended daily allowance (RDA). We need folic acid to help us form red blood cells and genetic material within our body cells.
And as if building cells wasn’t enough, Super Lentils are filled with about 8 grams fiber per ½ cup—mostly the soluble stuff that helps lower cholesterol. Eating these little legumes also give you plenty of protein and iron, keeping your body a powerhouse.
