I love Labor Day weekend—fall is right around the corner, yet summer's produce is still in full throttle.
Red bell peppers, corn, basil, tomatoes, okra and squash are piled high with no end in sight. Red bell peppers are an unheard 35 cents a piece.
Here is a perfect Labor Day menu that takes advantage of the farmer's market, yet won't have you sweating over the grill.
The chicken is great on the grill, but honestly is just as good baked. Served with a roasted red bell pepper sauce, fresh corn on the cob (boiled on the stove) and mashed potatoes (made in the microwave, no lie). It's a meal free from labor.
