January is for what we call “monk food”—simple, honest and comforting. The spirit of glamour and showmanship of the holidays is behind us, and this month is all about earthy flavors and simple comforts, no costly ingredient lists or complicated recipes in sight.

The serious, no-frills dishes fit for this month are healthy and nutritious and good for the soul, dishes best paired with warm socks and a book you’ve been meaning to finish. No table-scaping required.
