You scream! I scream! We all scream for ice cream! And you better believe the screaming will last all summer. Take your summertime craving beyond the basic bowl and carton with these creamy desserts.
Ice Cream Cookie Sandwiches: Make a batch of your favorite cookies (dense varieties work best as the cookies will need to contain a melty middle) and sandwich your favorite ice cream between two of them. Just be sure to make the cookies uniformly large and flat to support the scoop. For a sweet finish, add crushed candies or cookie crumbs to tops with a dollop of ice cream syrup to secure. - Molasses cookies + pineapple coconut ice cream + coconut
- Soft molasses cookies + lemon ice cream
- Soft chocolate cookies + vanilla ice cream + crushed peppermint candies
- Soft peanut butter cookies + chocolate ice cream + chopped malted milk balls
- Soft oatmeal cookies + mint chocolate chip ice cream
Strawberry Shortcake: You can’t go wrong with this simple combo of fruit, cream and cake. Make or buy an angel food cake to use as the dessert’s base, scoop on vanilla ice cream, then add diced strawberries and whipped cream on top. Try using blueberries, blackberries, raspberries or a combination of fruits for something new.
Ice Cream Pie: Soften your favorite ice cream just a bit, then spread it into a premade cookie crumb crust. Freeze until firm, and top with whipped cream, ice cream syrups, nuts, candies, or fruit. Be sure to serve it fast to ensure the crust won’t become soggy.
