Recycle holiday party and dinner leftovers with a casual DIY Omelet Brunch.

Drowning in leftover party food? Have an omelet party. Taylor and Karen Hayes of Hopkinsville, Ky., recycle food from their Christmas Eve family dinner into brunch the next morning. And most anything goes—potato casserole, smoked salmon, beef or pork roast, vegetables, everything except soup and dessert. Here are their tips:

  • Chop ingredients ahead and sauté or heat, so they’re ready to toss in the omelets.
  • Label plastic cups with guests’ names. Guests place filling ingredients for their omelets in the cups and give to the cook.
  • Beat eggs ahead of time and portion into the skillet with a cup.
