Healthy Bulgur

High in fiber and protein and low in fat, bulgur has been a superfood since the days of the Ottoman Empire.


If you've eaten tabbouleh, you've had bulgur. This ancient Middle Eastern grain is wheat kernels that have been steamed, dried and crushed. It's perfect for summer salads, needing no cooking, only a quick 15-to 30-minute soak in hot water.

It's also one of the best sources of fiber at 7g per 1/4 cup. It comes in coarse, medium and fine grinds. We like the whole grain bulgur by Bob's Red Mill—it's extra chewy. Use the coarse grind or whole grain for these yummy salads.
