While there are lots of words associated with casseroles, “fresh” isn’t one of them. “Cream soup,” “tuna fish,” and “surprise,” yes, but “fresh,” “summery” and “hip,” not so much.
This is exactly what we set out to change when we came up with these concoctions using ingredients from the garden. Our goal: To keep all the good, yummy things we love about casseroles—creamy, one-dish, hot, comforting—while keeping them fresh and healthy at the same time. Here are two hip, fresh dishes full of creamy yummy flavors and vegetables cooked together in a casserole. What a lovely surprise.
