Surplus holiday ham gets a second chance at dinner.

Sometimes holiday ham is even more succulent the second time around. When you’ve got a gracious plenty after everyone has had their fill, put those meaty leftovers to work in a variety of tasty dishes to last the rest of the week.

  • Add ham to corn chowder, potato bisque or creamy split pea soup.
  • Bake up a quickie gratin with slivers of ham, thinly sliced Yukon Golds and sweet potatoes; bind with a creamy Swiss cheese bechamel sauce.
  • Add ham to our Chicken Pot Pie recipe.
  • Try a springy dinnertime strata with ham, asparagus, aromatic leeks, aged Comté or Manchego, hunks of bread, and a custardy bind of eggs and cream.
