It's never a fond farewell to our favorite summer corn staples, Silver Queen and Peaches and Cream—because there's nothing like fresh sweet corn on or off the cob. Before they disappear completely, grab a dozen or so ears, and either cut off the cob and freeze, or use the corn now, in these fresh yet substantial fall-ish dishes. But better hurry, before they turn into pumpkins.
