This Saturday, I bought a few pints of fresh-picked strawberries at a nearby farmers’ market. They were so beautiful I wanted to make a special treat. I decided on a cake inspired by Victoria Sponge Cake, found everywhere in England and named after Queen Victoria. It’s a simple cake, perfect for letting the berries shine. I piled the fresh berries with whipped cream on top of layers of a vanilla butter cake. This dessert is easy to make from start to finish and is a stunner. And it’s perfect for the royalty in your own home.

This dessert (best eaten within 2 days) is ideal with flavorful small local berries. If using big supermarket berries, cut them into halves or quarters and sprinkle with a bit of sugar to bring out their flavor.
