A little over a year ago, Bacon Mania hit at an all time high. While it’s true the hearty strips of cured pork belly have had no shortage of admirers over the last 20 years, it seemed in 2012 that we, for one reason or another, just went a little bonkers for it. From the tongue-in-cheek release of the 50 Shades of Bacon cookbook to the countless “I love bacon” tee-shirts and bacon-speckled eats added to menus across the country—this little piggy certainly became a phenomenon.
And as with all good food obsessions and trends, it is bound to come to a belly-aching end—some may argue it already has. But we’re going to fight for bacon—because we just can’t live without those glorious, crunchy, salty strips as a key menu item. So how do we propose to do this? With dessert of course. Salty and sweet will never go out of style.
