Casseroles for a Crowd
Two holiday recipes for the one-dish wonder now fondly known as "casserole"
Mixtures of foods cooked together, aka casseroles, have existed since the middle ages, but not until MIT graduate John Dorrance discovered how to condense soup for John Campbell’s company did “casseroles” become what they are today. Canned soup aside, these casseroles are perfect for serving a gang. They’re assembled and baked in one dish, easy to serve, and need little else than a salad to be called dinner. So when holiday plans involve a gang that needs to be fed, turn to these cheesy (and high in calcium), seasonal, and warm dishes. No canned soup required.
This pasta al forno or baked ziti dish is much more sophisticated than the typical marinara-baked pasta and makes a lovely holiday entree for everyone.
