Banana Oatmeal Cake
Leftover oatmeal and mashed bananas star in this breakfast cake great for busy mornings.
As much as I’ve tried, my children don’t share my love of a hearty bowl of oatmeal, so I’m frequently left with half a pan of cooked cereal. Rather than throwing it out, I decided to toss it into a cake. The recipe I came up with is based on one from Jim Fobel’s Old Fashioned Baking Book—my go-to book for old-fashioned desserts. It uses leftover cooked oatmeal and yields an economical and super moist cake. Thinking of breakfast foods, I added some mashed banana and used coconut flakes and walnuts for a crunchy topping.
