True Mexican food is not the food most Americans know. Instead, true Mexican is very regional and varies dramatically from area to area.

Authentic regional Mexican cuisine is varied and healthful because many dishes are made up of chilies, beans, corn, nopalitos or cactus pads, fresh herbs and tart limes.

Although it is essentially peasant food, many Mexican recipes are created with celebrations and family in mind. Most ingredients can be found in supermarkets and Latin American grocery stores. Here I share of my favorite simple, delicious Mexican recipes you can serve all year with family and friends.
